Happy Fall!
Can you believe it’s officially fall! It sure feels like fall in here in the PNW! I long for the crisp fall morning and I’ll even admit the rain, but I will regret that come January -once all the holiday’s are over! 😉
I’d have to say I love each season and I’m usually ready for the change of weather, food, and just season of life. My kids are back in preschool, and it’s crazy to think it’s my daughters last year of Pre-K( queue the tears 😭)! Also, we went apple picking last weekend which was so much fun, it was a beautiful day too!
Anyways, back to fall and this amazing easy, but oh so delicious sheet pan meal! Don’t you just love a easy dinner? I do especially with 2 kids! 🙂 This recipe can easily be adapted to however you prefer, I made extras for leftovers as my mom and grandma were over, but you can easily half this recipe! . This fed four adults and 2 children with leftovers! 🙂
1 pan Autumn chicken dinner!

8-9 bone i skin on chicken thighs
3-4 slices of bacon, diced cooked and reserved
2 medium sweet potatoes, peeled and diced
1-1.5 pounds brussel sprouts, trimmed and cut in half
1 large red onion, chopped into large chunks
1 or 2 large honey crisp apples, cored and cut in to large wedges
2 tablespoons each of fresh rosemary and thyme.
1 tsp dried sage
1/4 cup of apple cider vinegar
1/2 cup of olive oil
kosher salt and pepper
Directions
- marinate chicken in vinegar,oil, herbs, salt and pepper. set aside while you chop your vegetables.
- Render your bacon, and set aside reserving 1-2 tablespoons of the bacon drippings.
- place the brussel sprouts, sweet potatoes, and red onion on a large baking sheet( I used a large 15″ x 21″) Drizzle the reserved bacon drippings over and mix around.
- place the marinated chicken thighs over the vegetables and bake in a preheated oven for about 35-45 minutes. or until a thermometer reads 165 degrees.
- at about the 25 minute mark or when the internal temperature is around 150, add the chopped apples(this prevents them from becoming mushy)
- Once the chicken is 165 degrees sprinkle on the reserved bacon, and turn your oven to broil. Broil the chicken for 3-4 minutes keeping your eye on it until the chicken is golden brown. Enjoy!
Notes
- If you don’t mind not crispy bacon you can skip step 3 of precooking it and add it to the vegetables in step 3.
- feel free to add extra herb mixture on top of the chicken before baking as well.
