Thai chicken meatballs

 

Hello meatballs! Not sure about you, but in my house meatballs of any kind are a huge hit! I was rummaging through my freezer while my kids were requesting meatballs, and all I had was ground chicken. So naturally Thai inspired meatballs sounded amazing and I just so happened to have everything on had too! Love when that works out! These go well with my Asian inspired slaw with a peanut dressing, or really anything you’d like, super flavorful. I hope you enjoy these as much as my kids did!

Ingredients

  • 1 pound of ground chicken, or turkey

  • 2 carrots, shredded

  • 1 zucchini shredded

  • 4 green onions, chopped

  • 1 tablespoon ginger, minced

  • 2 tablespoons of soy sauce, or coconut aminos

  • 1/2 cup cilantro chopped

  • 1 /2 cup of panko bread crumbs

  • 1 tsp garlic chili paste

  • 1 egg

Directions

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
  • mix all the ingredients together and form into 1″ balls. Bake in a preheated oven on a baking sheet for about 25-30 minutes, or until a thermometer reads 165 degrees
  • Serve with some rice or my Asian slaw with a peanut dressing. Enjoy!
