Shrimp Tacos With Pineapple Salsa and Cilantro Lime Slaw!

 

Let’s talk taco’s! I love tacos, really I could probably eat them daily and not tire of them! Thankfully, there are so many varieties; carnitas, fish, chicken, salmon, steak, and more! These shrimp tacos are so good, and you can whip them up in about 30 minutes for a quick weeknight dinner!

Did I mention this cilantro lime sauce is soooo good! My husband practically drinks it! It’s super versatile too, if you like it spicy add more jalapeno, or keep it out for a mild sauce. It’s also guilt free since I use greek yogurt, you can however, use sour cream if you prefer.

Super tasty shrimp tacos with a cilantro lime slaw and pineapple salsa! ready in about 30 minutes for a quick weeknight dinner!

Ingredients

  • Cilantro lime slaw
  • 2 cups of plain greek yogurt

  • 2 garlic cloves

  • handful of cilantro, rinsed roughly 1/4-1/2 cup

  • jalapeno to taste

  • 1 lime, juiced

  • 1 tsp salt

  • 1/2 head of red cabbage, shredded or finely sliced.

  • Pineapple salsa
  • 8 oz fresh pineapple, diced

  • 1/2 red onion, diced

  • 2 tablespoons chopped cilantro

  • 1 tablespoon jalapeno, minced

  • 1 lime, juiced

  • 1 tsp salt

  • Shrimp seasonings
  • 2 pounds of shrimp, peeled and deveined, tails removed

  • 2 teaspoons each of Chil and cumin powder

  • 1/4-1/2 teaspoon of chipotle powder, depending on how spicy you like it

  • 1 teaspoon of kosher salt

  • 2-3 garlic cloves, minced

  • 2 tablespoons of olive oil.

  • Taco stuff
  • 10-15 corn tortillas

  • guacamole or smashed avocado

  • lime wedges

Directions

  • To make the cilantro lime sauce add; yogurt, cilantro, garlic, jalapeno and lime juice to a blender and blend until combined. Taste and adjust to your preference. Mix sauce reserving 1 cup for later, into the cabbage and toss. set aside.
  • Mix ingredients together for the pineapple salsa and set aside.
  • In a large bowl add; raw shrimp, 1 teaspoon of oil, and seasonings, mix well to coat all the shrimp.
  • In a large skillet over medium high heat drizzle oil, add shrimp and garlic to the pan. Saute for 5-8 minutes flipping occasionally, until cooked. Try not to over cook your shrimp or they will become chewy.
  • Assembly; add the guacamole or smashed avocado, slaw, shrimp, pineapple salsa and top with extra sauce. Enjoy!

Notes

  • Feel free to add as little or as much jalapeno as you like. I lean towards the mild side for my kids.
  • This also works well for chicken or fish.
