Looking for a quick dinner for the family? These salmon sandos are perfect for a quick and healthy dinner for the whole family! Additionally, they whip up in under 30 minutes. Especially good for hot days when you want a lighter dinner. We have become a bit addicted to the TJ’s Vegan Creamy Dill Dressing, it’s so good on so many things!! When making these be sure not to overcook the salmon if it’s on thinner side, as it will cook quickly. No one wants dry salmon. If making this for kids season theirs lightly with the Cajun spices. Serve with some fruit or a salad on the side for a complete and healthy meal.

Growing up in the PNW we are fortunate to have an abundance of local wild fish, so when shopping naturally you should really aim to find wild-caught Alaskan Salmon. Wild-caught salmon is naturally pink in color without any dyes or treated with pesticides.

Easy Salmon Sandwich With Creamy Dill Dressing

Ingredients
4 Pieces of skinless salmon, 3-4 oz. each
2 tablespoons of avocado oil
Cucumber, thinly sliced
Red onion, thinly sliced
Arugula, spinach or greens of choice
Trader Joe’s Vegan Creamy Dill Dressing
4 Brioche buns, toasted2 Tablespoons of Cajun seasoning, store bought or see below for homemade version.

Directions
- Slice the onion and cucumber, set aside.
- Heat a skillet to medium high heat. While the pan is heating up pat salmon dry and season with Cajun spices.
- Once pan is hot add oil and salmon. Cook salmon for about 3-4 minutes per side depending on thickness. You can check for doneness with a meat thermometer if your unsure, you want to aim for 110-125 degrees for medium rare.
- While salmon is cooking toast buns, the not necessary but I love a toasted bun!
- Assemble The Sandwich
- Layer on the bun a little of the TJ’s Creamy Dill Dressing, salmon, cucumber, red onions, arugula, and a drizzle of more sauce and add your top bun.
- Serve with extra dressing on the side and enjoy!
Notes
- Avocado is excellent on this as well. Any lettuce of choice works great, think, spinach, microgreens, arugula, baby lettuces!
