You’ll love this refreshing watermelon salad, it’s bursting with flavor and perfect for hot summer nights!

Nothing says Summer more than watermelon and this salad is a prefect side dish to any summer gathering or meal. You can also add some grilled shrimp or quinoa for a light summer dinner, perfect for hot days! The salad is best prepared and served right away, but you can always make the dressing in advance and store in the fridge, just make sure to bring it to room temperature prior to serving.

Watermelon, Cucumber, Feta and Arugula salad with a lime dressing.

Simple and refreshing watermelon salad with crunchy cucumbers, creamy salty feta, peppery arugula with fresh mint and basil all drizzled with a honey and lime dressing.

Ingredients

  • Honey lime dressing
  • 1 Tablespoons of olive oil
    pinch of salt

  • 1 Tablespoons of honey

  • 1 Tablespoons of lime juice

  • Watermelon Salad
  • 1/2 Mini watermelon, peeled and cubed.

  • 1/2 English cucumber, cubed

  • 4 oz of Feta cheese crumbled.

  • 2-3 handfuls of Arugula, enough to cover the bottom of a medium platter or salad bowl.

  • 4-6 mint leaves, chopped

  • 4-6 basil leaves chopped
    1-2 tablespoons red onion, thinly sliced

Directions

  • Make the dressing. In a small bowl whisk together the honey, lime juice, olive oil and pinch of salt. set aside.
  • In a large bowl or serving platter add arugula on the bottom, top with watermelon and cucumber making sure alternate so they’re mixed up then add crumbled feta, onion and sprinkle on the herbs.
  • Drizzle the dressing over top and serve.

Notes

  • Add some grilled or chilled shrimp for a quick and simple meal on those hot summer nights. You can easily double the recipe as well.
