Growing up in the PNW we are fortunate to have an abundance of local wild fish, so when shopping naturally you should really aim to find wild-caught Alaskan Salmon. A healthy, quick and filling Smoked Salmon salad with jammy eggs in under 15 minutes!

Ingredients

  • 3 large soft-boiled eggs

  • 5 oz of baby greens, spring mix, arugula, romaine or greens.

  • 4 oz of hot smoked salmon, gently pull or chop up pieces.

  • 1 Avocado, sliced

  • 1/2 English cucumber, cut in half and sliced

  • 1/4 red onion, thinly sliced

  • 1-2 Tablespoons of capers, rinsed and drained

  • 1 lemon, cut into wedges

Directions

  • For the soft-boiled jammy eggs:
  • Bring a medium sided pot of water to a boil and then bring the heat down to simmering. Slowly and carefully add the eggs one-by-one using a slotted spoon into the water.
  • Turn the heat up to medium and simmer your eggs for 6 1/2 minutes. While the eggs cook prepare the ice bath. Fill a large bowl or container with cold water and a handful of ice.
  • When your timer goes off, transfer them cafefully to the ice bath. Allow them to cool for a few minutes.
  • Finally, peel your eggs. Tap the bottom of the egg to remove a little bit of the shell and gently peel your eggs. I’ve found peeling still warm eggs under a little running water, it helps the peels slide right off.
  • Assemble your salad:
  • In a medium salad bowl add your baby greens, smoked salmon, cucumber, onions, capers, and avocado.
  • Cut the eggs in half and add them to the salad. Drizzle with the dressing and season with salt and pepper to taste. Serve with lemon wedge and more dressing on the side. Enjoy the salad right away or served slightly chilled.

Notes

  • Adding a sprinkle of Everything Bagel seasoning is a great addition!
  • You can easily double the recipe to feed more!
